Lemon Curd

Last week I got my monthly Rachel Ray magazine and was SO happy with how many new recipes I wanted to try. The first one that stood out was this amazing Kiwi-Lemon Cheesecake. It called for lemon curd so I ran off to the store to buy some, but it was spendy! I started looking online and decided I could do it myself.
Once I got it in my head that I was going to make that dang lemon curd I started seeing it EVERYWHERE. My favorite use for it was on the blog stephmodo. Delicious looking lemon curd shots with raspberries. YUM!




I had to get started on this right away! There were SO MANY lemon curd recipes online, so for my first attempt to make it I decided to go the easy route and chose the microwave version from allrecipes.com. There was a lot of squeezing, zesting and stirring happening in my kitchen that afternoon!








My curd came out good, although it was a bit too lemony for me I think. I want to try a bunch of recipes until I find the one that suits me best.

    1. Haha, thanks! Tonights dessert menu is boxed cake mix for cupcakes :) Its SO easy, plus I've tried making cake from scratch and it was terrible! Yay for boxed stuff!!

What I've been HALFway reading.

Guys. I've started around 512 books over the last few months. I haven't finished any. GAH. Here's just a few - Divergent by Veronica Roth. I'm so excited to actually keep reading this. I loved the movies but feel like the books are ALWAYS better. I haven't read much of this one yet because I feel guilty every time I pick it up. I always feel like I should be reading something that will improve me. I'll finish it some day. Simple Steps to Foot pain Relief by Katy Bowman, MS. I started reading this one for clients who have foot / knee / hip / back / shoulder pain. Basically any pain. I love trying to help my clients more than what they expect, so bits of information I can soak in and pass on are great! Katy Bowman does a great job breaking down the foot and then gives some awesome techniques on things you can do to help your feet. I'm close to done with this one actually, and thats good because it's due back at the library in a few days. Goo...
