Dinner Fail, Dessert Win!


Last nights dinner was supposed to look like this



Instead it turned out like this







It was a serious fail. The flavor was good, but it looked terrible and took more than twice as long to make as we thought it would. Oh and, it was a bit too crispy.

BUT

Dessert redeemed me, it was Kiwi Lemon Cheesecake - Yum! The recipe called for lemon curd, and when I saw how expensive it was at the store, I decided to try and make my own! It turned out great, and this was the end result






It was not quite as solid as it should have been, but delicious non-the-less! Both of these recipes were from Rachel Ray's Everyday magazine. It was exciting making new things, hopefully next time they turn out a bit better :)

    1. Thanks! Super easy too, mix 11 oz lemon curd with 4 oz of softened cream cheese until it grows about twice its volume and spoon into a graham cracker crust. Let it sit in the freezer for a couple hours {covered of course} and slice kiwis on top! I hope you make it, and thanks for coming by!

    1. A baby on the way!? SO JEALOUS! :) Congratulations! I am a terrible cook, but slowly learning! I just started branching out a bit more and im starting to really like it. Seriously tho, i see no need to cook when soon all you will be doing is eating, sleeping, feeding and changing dirty diapers :)

What I've been HALFway reading.

Guys. I've started around 512 books over the last few months. I haven't finished any. GAH. Here's just a few - Divergent by Veronica Roth. I'm so excited to actually keep reading this. I loved the movies but feel like the books are ALWAYS better. I haven't read much of this one yet because I feel guilty every time I pick it up. I always feel like I should be reading something that will improve me. I'll finish it some day. Simple Steps to Foot pain Relief by Katy Bowman, MS. I started reading this one for clients who have foot / knee / hip / back / shoulder pain. Basically any pain. I love trying to help my clients more than what they expect, so bits of information I can soak in and pass on are great! Katy Bowman does a great job breaking down the foot and then gives some awesome techniques on things you can do to help your feet. I'm close to done with this one actually, and thats good because it's due back at the library in a few days. Goo...
